#113 radish and cucumber salad with chipotle peanuts

I picked this recipe because I had some French breakfast radishes from the farmers market that needed to be put to good use. These radishes aren't uncommon at Farmers markets, but they're definitely not the easiest to find in the US. This salad combines them with finely sliced daikon, cilantro, cucumber and candied Chipotle peanuts. It's somewhere between Mexican and Asian, and more balanced and enjoyable than I imagined. This would be a perfect light starter for a fancy dinner party.
